Soekris has a weird add-console-and-vga-together on console.

you didnt say how youre booting,
but for me grub booting with output to serial
works with this:

serial --speed=115200
terminal serial

timeout 5
default 5

title Voyage Linux 0.8 (Build Date 20111122)
root (hd0,0)
kernel /vmlinuz root=LABEL=ROOT_FS  console=ttyS0,115200n8 all_generic_ide ide_c
ore.nodma=0.0 ide_core.nodma=0.1
initrd /initrd.img

IIRC, pxelinux likes:
SERIAL 0 115200
