Well, two options from me:
Buildroot: http://buildroot.uclibc.org/
With this you can choose the packages you want and it has targets for
Soekris boards.
I also maintain my own distro for Soekris; http://www.zelow.no/floppyfw/
but it's kinda like a specialized buildroot and going straight to the
source may be the simplest choice (but more complex to configure,
buildroot have many nice options :=)
With floppyfw you'd have to download the devkit, configure, add a bind
makefile/package and compile it all. With Buildroot you also configure
and compile but it builds it's own toolchain.
